Recipe: Chilaquile Casserole

Chilaquile Casserole. Yum. Yum. Yum. 

I was given this recipe years ago from a friend of mine.  I've tweaked it over the years and it's a regular in my house. The kids love it with sour cream on top. 


Ingredients:
Corn tortillas
Oil
Mozzarella Cheese 16 - 24 oz
Salt

Step 1.
Get your homemade enchilada sauce out.

Step 2.
Get out the tortillas.


Step 3. 
Grate the Mozzarella Cheese.

Step 4.
Heat oil in skillet and start frying those tortillas. 

Step 5.
Layer the fried tortillas in a baking dish.

Step 6.
Sprinkle the shredded cheese over the fried tortillas.

Step 7.
Ladle some of your Homemade Enchilada Sauce over the cheese. 
Sprinkle with salt. 

Step 8.
Fry more tortillas and start another layer.

Step 9.
When it's completely full and layered to the tip-pity top. Pop it in the oven and bake on 350 degree until cheese and sauce it bubbly. 

Step 10.
Fresh out of the oven. 

Step 11.
Enjoy!
