Chilpotle Chicken over Rice

This is one of our family favorites! I was given this recipe from a friend 14 years ago. It can be a little spicy. We like it over Red Rice served with warm homemade corn tortillas. My kids love a dollop of sour cream on top of theirs. Yum! Enjoy!

media crema

You can also use chilpotle salsa.

Step 1
Cut chicken in bite size pieces and fry in a little oil 

Step 2
Once chicken is cooked through add can of chilpotle peppers and/or chilpotle sauce 

Step 3
Stir together 

Step 4
Add 2 cans of Media Crema 

Step 5
Stir and heat through on low 

Step 6
Serve over rice with a side of homemade corn tortillas 

Left overs may get spicier the more they sit. I suggest removing the peppers before storing in the fridge to help cut back on how spicy it will become. I hope you try this recipe out.
