Recipe: Mexican Red Rice

My version of Mexican Red Rice

I'm sharing another one of our family favorites today. Over the years, I've had a few friends ask for the recipe and just the other day one of my sister in law's asked for it. So here it is. 

Rice 3 cups
Water 4.5 cups total
Salt 1 tsp or to taste
Half of an onion
Large tomato
Sazon season packet

Step 1
Get out your rice cooker. I bought mine off Ebay years ago for around $15 shipped. You can also use a large pot with a lid and do this over the stove if you do not have a rice cooker. 

Step 2
Put a little oil in the bottom of the rice cooker. 
This helps prevent the rice from sticking to the cooker.

Step 3
Add 3 cups of rice to cooker 

Step 4
Add 1 Sazon Goya season packet to rice. My local Walmart carries it. 

Step 5
Add 1 teaspoon of salt or to taste

Step 6
Get out your food processor or blender.
Throw in the tomato, half of onion and 1 cup of water. 

Step 7

Step 8
Pour pureed mixture in with the rice. 

Step 9
Add the rest of the water and stir.

Step 10
Put lid on cooker and push button down to cook. 

Step 11
When done cooking, the rice cooker will have automatically switched from cooking mode to keeping it warm mode. Fluff rice with a fork. 

Step 12
Enjoy with your favorite meal. Like Chilpotle Chicken

We serve this rice regularly in my house. We eat it as a side dish to Chilpotle chicken as mentioned above, grilled steak, beans, soup, etc. I'd love to hear if you decide to make this recipe and what you think. Thank you for your sweet comments. I love reading them. Thank you for being here.

  1. Love your recipe, I will try it. Using the Sazon packs is a must in our cooking in Puerto Rico. I have a rice cooker for more than 25 years, they are great, I use it to make white rice only. But now I will try your mexican rice. Thanks

I have never nailed the textured in the rice cooker, but I can see I wasn't doing what you have. I'll try your technique. I can't wait since I like being able to let things unattended LOL
