Crock Pot Chicken Pot Pie Recipe

The cooler weather has started in my neck of the woods. Is it cooling down where you live? Summer is coming to an end and this cooler weather has me in the mood for warm soups and casseroles.

I found some inspiration at For What It's Worth for a Crock Pot Chicken Pot Pie recipe. It looks so yummy. Go check it!! I didn't have all the ingredients for her Crock Pot Chicken Pot Pie recipe so I used her recipe as inspiration to come up with my own recipe based on what I did have. It was so yummy and my kids loved helping me make the cut out crust. There is so much fun and mess with kids helping in the kitchen. :)

Ingredients:

2 large Chicken Breast
4 long carrots chopped
2 large potatoes, peeled and chopped
1/2 medium onion, diced
2 large cloves of Garlic, minced
1 can of Corn, drained
1 can of Peas, drained
1 can of Cream of Chicken soup
8 oz Cream Cheese
5 Chicken Bouillon cube
Sprinkle of Red Pepper Flakes, just for fun
Salt and pepper to taste
3 cups of water
3 tbls corn starch

Instructions:
I turned my crock pot on high. Dump all of the ingredients in the crock-pot! Stir. Yay, that was kind-of fun. LOL

I let the pre-made pie crust set out on the counter to come to room temperate. Lightly floured the table. Rolled it out. Then I let the kids use Fall themed cookie cutters and cut out as many fun shapes as the could. Placed cut outs on lightly sprayed cookie sheet and baked till golden brown.

It is super yummy and family approved! yay!! Please give this a try. It is a fun spin on Chicken Pot Pie!

Blessings,

Starla J.

  14. Crock pot meals are the best, aren't they?

I usually make my chicken pot pies from scratch and LOVE them, but this recipe is far easier.

    Thanks for sharing!

  15. I love how you baked the crust cut-outs separately then added to the top - genius! My husband loves chicken pot pie, but has definite opinions about "soggy bread". He'll love this! Can't wait to give it a try soon! Thanks for sharing - I'm sharing your post too.

    1. I usually use frozen chicken breasts and it takes 8 hours give or take on low for my crockpot.
