We love it topped with bacon and served with homemade rolls. My son likes to take chunks of his roll and dip it in the soup. Yum!!
Cheesy Potato Soup
12 Potatoes, peeled and cubed
1 stick of Unsalted Butter
1/2 cup AP Flour
1 cup of Sour Cream
2 cans of Cream of Chicken Soup
5 Chicken Bouillon Cubes
5-8 cups of water
1 cup of milk
16 oz of Sharp Cheddar, grated
Place peeled and cubed potatoes in a pot of water to boil. Drain when almost done; not to soft. Set aside. In large pot melt butter. Add flour to melted butter and make a rue. Stir in the milk, cream of chicken soup, sour cream, bouillon cubes and water (add enough water to your desired consistency). When bouillon cubes have dissolved add grated cheese. Once cheese is melted add the cooked potatoes back into the cheese sauce. Stir. Turn off heat. Serve with crumbled bacon on top with a roll on the side. It will be piping hot so be careful when serving.
