Baby Carrots 2 to 3 cups
Potatoes 3 large, peeled and chopped
White Hominy 2 cans, drained
Chicken Bouillon Cubes 4
Small onion, chopped
Garlic 2 large cloves, minced
Salt to taste
Place whole chicken in large pot and boil till done. Take chicken out of water and set aside to cool down. While waiting for chicken to cool, add carrots, potatoes, onions, garlic, bouillon and salt to water. Cook till carrots and potatoes are tender. De-bone and shred the chicken. Add shredded chicken meat back into the water with the veggies. Add the hominy. Stir. Cook just till heated through. Serve.
Out family loves fresh diced jalapenos, onions, cilantro, and lemon juice on top of ours. My personal favorite is to have mine topped with onions, clilantro and lemon juice. My kids like just lemon juice on theirs. My husband is the spicy jalapeno eater.
